Establishing a routine seems to be the best way to simplify meal planning, I suggest doing the following. Set aside 1 day for meal planning, then for all shopping or ordering on the next day and -the next- for food prep. Repeating meals or having a theme night for example always having a Crockpot meal would assist too. Preparing large amounts of food and keeping them in the freezer would make it easier to automate dinner because you don't have to start over every single night.
You are not wrong! I LOVE to cook! I even went to culinary school. Yet having to figure out breakfast, lunch and dinner (and snacks!) every day for my family is one of life’s true annoyances. Even with meticulous meal planning. Drives me up a wall some days. Lol
