A basic yet tasty beef stroganoff can commence by melting a spoon each of unsalted butter and oil in a skillet over moderate to high heat. When the butter begins to froth, toss in a roughly cut onion and sauté for five minutes to soften. Then add 200 grams of sliced baby chestnut mushrooms which should be cut into thick pieces and stir fry for an extra 3-4 minutes till they attain light brown color. After that, remove everything from the skillet to a bowl, and add ribeye steak slices weighing 400 grams in the grilled pan till a crust settles This is optional, if desired, pour a bit of brandy. Combine the onions and mushrooms with the brandy mixture, seasoning with salt and pepper, drizzle 240 ml of double heavy cream then 180 ml of sour cream and let settle without boiling. Finally serve it up parsley and paprika on it.

Made this tonight but didn't have meat but had chuck pot roast- cut that thinly sliced. I did coat it with flour, salt, pepper. Just simply dredged the meat in flour then put in butter & oil in pan, didn't have heavy cream but I used 1/2 & 1/2 instead. This was an amazing recipe. The family went crazy. I literally cooked and it was still little red but oh soooo good. The flour really changed this up for the better.

I did this recipe and it’s just so simple, easy, and delicious! To me it’s important to have a good quality meat and cast iron pan to sear the meat. Oh the smell when you’re cooking the onions and the meat is sooo good. I added garlic to the onions and porta bella mushrooms. Quick, easy, delicious. Thank you!

I made this last night. I made sure to brown the beef and use the pan fond to build flavor - I deglazed with 3 Tbl of brandy. However, in the end it was still bland and watery even after I allowed it to simmer at the end. I had to add more salt and a cornstarch slurry to thicken. It needs a little garlic, maybe a small clove minced and added in the beginnig with the onions and mushrooms. Next time I will just use double the sour cream and skip the heavy cream all together and I'll add more salt. Other than that, it was good.

I had the courage to try your recipe last night after my husband took me to HEB to grab the ingredients. When I was grabbing sirloin steak, however, he told me that if we were spending that much on the meat, he'd rather just grill himself an actual steak. I agreed to use ground beef. As I grilled the mushrooms and onions he was beginning to say "it looks good". When I added the ground beef, after adding the ingredients, he told me that it looked like Hamburger Helper lol. Therefore, he wasn't too crazy about eating it. He took a bite and said "it's okay". A little bit later he said with confidence "we can do this again". Therefore, he was quite satisfied with the recipe, so I could only imagine how it would've tasted with true steak. He gave me a hand shake for misjudging it. I notified him that we still had noodles, cream, meat, mushrooms, onions, etc to make another batch. I used heavy cream since we both hate sour cream, but it clearly did the job. We have a history of making some nasty fideo dish with Ramen noodles & tomato sauce, which is so dull and bland, so I'm happy to have your recipe put into my books. Thanks for the advice! Good job!

I recommend putting tomato in it somehow, either half a can of peeled tomato in juice or some paste. It gives it a great acidic taste that cuts through the cream, especially if you haven't got sour. Also, if you want to really ramp the taste up for a special occasion, you have to basically cook it for as long as possible, on a very low heat. The exact same recipe also works great with chicken, though it won't go as well with the mushrooms so I usually sack those off in that case.
Will making this with ground beef be less flavorful or just fine?
