With beef stroganoff, take rib-eye steak and cut it into 1 cm wide strips, then rub some oil, salt and pepper. Place the beef on a hot pan in a single layer and wait for a minute or until you can see crust forming on the edges, then turn it over and let it sit for another 30 seconds. Don’t move the steak a lot because it needs to sit so it can develop a crust. Using a cast iron pan can also help to brown the edges of the steak which adds extra flavor to the meat.
If you want it really tender then use dutch oven and leave it for about an hour on a very low heat. Just control that there is enough cream/moisture.
