Sushi was brought to America by Japanese immigrants during the late 19th century and enjoyed brief popularity among the upper class. However, due to political tensions, its popularity waned. It wasn't until the 1960s, post-World War II, with the advent of refrigeration, that sushi began to rise in popularity again in America, particularly along the west coast. By the 1980s, sushi restaurants were widespread.
Fun fact: a lot of sushi restaurants in America are run by Chinese people.

I’m from Minnesota. I literally had never heard of sushi until the early 2000’s. Now it’s one of my favorite foods. Trends take a while to get from the coasts to inland America.
Major Correction: the Meiji restoration was not an "imperial takeover" it was a revolution which saw His Majesty, Emperor Meiji restored to full power and the abolition of the samurai class. It brought about rapid industrialization and turned japan into a major world power
