In making beef stroganoff, adding brandy is not a must. It can be nice to include for more flavor but it is not a necessity. There is enough flavor in the dish without it, particularly if you are doing seasoning in a cast iron pan which can nicely finish the steak and the overall flavor of the stroganoff.
I've made this several times for my wife and I and it has turned out fantastic each time. For our tastes, we prefer to add cognac but regardless, it is delicious, quick, and easy.
I liked it with the brandy as well.
The metal spatula on that case iron pan hurts my heat.
