Once you finish with this video, you should be able to successfully incorporate sour in beef stroganoff sauce without it splitting. To prevent curdling, slowly introduce the sour cream. It'll only take a brief time, but it is better to be safe and avoid splitting the mixture. So do not whip it up too hard. I am assuming you already know how to make sour. When adding sour cream while making beef stroganoff ensure that double heavy cream is added to the pan first because it has a greater amount of fat content. After that, the sour cream can be added. Because sour cream has less fat than heavy cream it has a tendency to breaking when it touches the pan. Combine the ingredients and carefully warm the mixture until it gets warm and start to steam at pan’s edge while avoiding a full boil.
